My friend, Ranya, makes the BEST salads. Somehow, she takes a light, quick lunch and turns it into an art form. And this salad is one of her greatest creations so far.
Here’s her delicious recipe, so prepare yourself for your new favorite weekday lunch (or pretty appetizer at your next dinner party)!

To make this salad, Ranya advises adding as much or as little of each component as you’d like to customize it to your preferences (I’d go heavy on the feta and banana peppers for extra zest!). She also shares her favorite brands for truffle oil dressing and beets below:
Ingredients
- Arugula
- Love beets, chopped
- Chickpeas
- Red onion, diced
- Pepperoncini, chopped
- Crumbled feta
- Truffle oil vinaigrette (here’s Ranya’s favorite! It sells out quick!)
Instructions
- Chop the Love beets and pepperoncini.
- Dice the red onion into small pieces.
- Add ingredients to a large mixing bowl including the dressing.
- Mix thoroughly and serve immediately.
